Fresh Summer Salsas

Papaya & Mango Salsa

Serves 4

  • 1/2 Ripe mango (peeled and diced)
  • 1/2 Ripe papaya (peeled and diced)
  • 1/2 red onion (diced)
  • 1/2 teaspoon fresh red chili, finely chopped
  • 2 Tablespoons fresh coriander (chopped)
  • Juice of one lime
  • Salt & pepper
  1. Combine all the ingredients on a bowl and leave it in fridge 1 hour before serving.

Goes best with: Salmon, white fish, prawns.

Fresh Tomato Salsa

Serves 4

  • 2-3 medium tomatoes (diced) or 20 cherry tomatoes quartered
  • 1 medium red onion (diced)
  • 1 garlic clove crushed
  • 2 Tablespoons of coriander (chopped)
  • 1/2 red chili finely chopped (seeds removed)
  • 2 Tablespoons of balsamic vinegar
  • Salt & pepper
  1. Combine all the ingredients on a bowl and leave it in fridge 1 hour before serving.

Goes best with: chicken, grilled steak, fajitas, tortilla chips

Watermelon Salsa

Serves 4

  • 1/4 of a medium watermelon, diced
  • 1/2 red chili, seeds removed, finely chopped
  • 1 lime, juiced
  • 1 small red onion, finely chopped
  • 1/4 of a cucumber, peeled, seeded and diced
  • 1/2 mango, peeled and diced.
  • 1/2 teaspoon of garlic powder
  • 5 basil leaves, chopped (or use coriander)
  • Salt & pepper
  1. Combine all the ingredients on a bowl and leave it in fridge 1 hour before serving.

Goes best with: Chicken, fish, steak, chips
