Chef Gaia who was born near Bologna has always had a passion for cooking. His work has taken him\u00a0 to Canada, Australia, England pursuing his love for food before returning to Italy. In Italy, he worked in various\u00a0 Michelin-star restaurants, improving his own skills.\u00a0 He then left Italy to go to work for the famous Vanitas restaurant in Dubai&#8217;s Palazzo Versace. Since moving to the banks of Lake Geneva, Gaia has settled down in the touristic town of Ouchy to share his love for Italian cuisine with locals and visitors alike.<\/p>\n<h2><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-8275\" src=\"https:\/\/ahungryblonde.com\/wp-content\/uploads\/2018\/07\/bread-1.jpg\" alt=\"\" width=\"1024\" height=\"683\" \/>The Menus<\/h2>\n<p>Chef Gaia offers two different menus at L&#8217;Accademia, one incorporating twists on classic Italian dishes executed with absolute perfection such as classic risottos, tiramisu,\u00a0vitello tonnato. The other <a href=\"https:\/\/www.angleterre-residence.ch\/fileadmin\/documents\/angleterre-residence.ch\/pdf\/restaurants-bars\/Carte_Ete_2018_FR.pdf\" class=\"broken_link\" target=\"_blank\" rel=\"noopener\">menu<\/a> being a little more innovative and creative in terms of ingredients and flavour combinations and features dishes such as tuna served 3 ways, carbonara risotto, sorrento lemon cheesecake. I am not even a huge fan of pasta or spaghetti ( I love rice !!! ). However, I was able to\u00a0see for myself where all the pasta is made and therefore, knew\u00a0 I just\u00a0 had to try one of the dishes. I was definitely not disappointed and I can only recommend you <em><strong>ALL<\/strong><\/em> try this wonderful spaghetti.<\/p>\n<figure id=\"attachment_8280\" aria-describedby=\"caption-attachment-8280\" style=\"width: 1024px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-8280 size-large\" src=\"https:\/\/ahungryblonde.com\/wp-content\/uploads\/2018\/07\/IMG_9434-1.jpg\" alt=\"\" width=\"1024\" height=\"683\" \/><figcaption id=\"caption-attachment-8280\" class=\"wp-caption-text\">Potato Flour Spaghetti and Seafood<\/figcaption><\/figure>\n<figure id=\"attachment_8281\" aria-describedby=\"caption-attachment-8281\" style=\"width: 1024px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-8281\" src=\"https:\/\/ahungryblonde.com\/wp-content\/uploads\/2018\/07\/IMG_9437-1.jpg\" alt=\"Stuffed squid garnished with pasta \" width=\"1024\" height=\"683\" \/><figcaption id=\"caption-attachment-8281\" class=\"wp-caption-text\">Stuffed squid garnished with pasta<\/figcaption><\/figure>\n<p>Those of you who know me, know to what extent I love ice cream and stay away from fruit sorbets ( I don&#8217;t believe that sorbet is a dessert !! ). However, basil sorbet is my biggest weakness. In fact, I love all aromatic herbs in sorbets. The panna cotta and basil sorbet is probably the most beautiful dish I have seen in such a long time. The contrast between the shades of green and the bright pink instantly made me go &#8220;WoW &#8221; as the dish was laid down carefully in front of me. You can feel the passion behind every dish. Nothing leaves the kitchen unless it is as close to perfection as possible.
