It tastes absolutely delicious. This loaf is perfect at any time of the day.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-8220 aligncenter\" src=\"https:\/\/ahungryblonde.com\/wp-content\/uploads\/2018\/07\/img_4701-e1477378484763.jpg\" alt=\"\" width=\"600\" height=\"399\" srcset=\"https:\/\/ahungryblonde.com\/wp-content\/uploads\/2018\/07\/img_4701-e1477378484763.jpg 600w, https:\/\/ahungryblonde.com\/wp-content\/uploads\/2018\/07\/img_4701-e1477378484763-300x200.jpg 300w, https:\/\/ahungryblonde.com\/wp-content\/uploads\/2018\/07\/img_4701-e1477378484763-370x246.jpg 370w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>Makes:&nbsp;1 loaf<\/p>\n<ul>\n<li>(240g) whole wheat flour (measured correctly)<\/li>\n<li>1 tsp baking powder<\/li>\n<li>\u00bd tsp baking soda<\/li>\n<li>2 tsp ground cinnamon<\/li>\n<li>\u00bd tsp ground nutmeg<\/li>\n<li>\u00bd tsp ground ginger<\/li>\n<li>\u00bd tsp salt<\/li>\n<li>14g coconut oil or unsalted butter, melted and cooled slightly<\/li>\n<li>2 large egg whites, room temperature<\/li>\n<li>1 \u00bd tsp vanilla extract<\/li>\n<li>(244g)&nbsp;pumpkin pur\u00e9e<\/li>\n<li>60 g plain nonfat Greek yogurt<\/li>\n<li>50ml&nbsp;pure maple syrup\/honey<\/li>\n<li>60ml nonfat milk<\/li>\n<li>2 tbsp Mixed seeds and cranberries to sprinkle on top<\/li>\n<\/ul>\n<ol>\n<li>Preheat the oven to 176\u00b0C, and coat a loaf pan with nonstick cooking spray.<\/li>\n<li>In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. In a separate bowl, whisk together the coconut oil, egg whites, and vanilla.<\/li>\n<li>Stir in the pumpkin pur\u00e9e and Greek yogurt, mixing until no large lumps remain.<\/li>\n<li>Stir in the maple syrup.<\/li>\n<li>Alternate between adding the flour mixture and milk, beginning and ending with the flour mixture, and stirring just until incorporated. (For best results, add the flour mixture in 3 equal parts.)<\/li>\n<li>Spread the batter into the prepared pan, and gently press the remaining chocolate chips into the top of the batter.
