Mix and match all sorts of ingredients to create as many different variations as you wish. I enjoy making them with cherry tomatoes, ham, goats cheese, feta, serrano ham, smoked salmon, basil, coriander, peppers etc<br \/><strong>Ingredients<\/strong><br \/>Serves 6<\/p>\n<ul>\n<li>6 eggs<\/li>\n<li>3 slices of ham, smoked salmon etc<\/li>\n<li>Chop up some of your favourite vegetables (onions, peppers, spinach&#8230;)<\/li>\n<li>Select a cheese (gruy\u00e8re, feta, cheddar, goats cheese&#8230;) (optional)<\/li>\n<li>Add herbs (optional)<\/li>\n<li>Salt &amp; pepper<\/li>\n<\/ul>\n<ol>\n<li>Preheat the oven to 190 degrees Celsius and grease a muffin tin.<\/li>\n<li>Beat the eggs in a bowl and season.<\/li>\n<li>In the muffin tins, evenly distribute the meat and veg so that you fill half the muffin wells.<\/li>\n<li>Take the eggs and add 2-3 tablespoons to fill the remaining muffin wells.<\/li>\n<li>Top off each uncooked muffin with the cheese and herbs.<\/li>\n<li>Bake for approximately 15 mins.<\/li>\n<\/ol>\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/ahungryblonde.com\/wp-content\/uploads\/2018\/10\/Capture2-2-1.png\" alt=\"\" class=\"wp-image-8845\"\/><figcaption>Egg, Spinach, Feta &amp; Red Pepper Muffin<\/figcaption><\/figure>","protected":false},"excerpt":{"rendered":"<p>I love that these egg muffins are so easy to make, you can make a batch of them at at ime and freeze them or keep them in fridge and simply microwave them for a minute when you feel like having one.
