I have the perfect solution, this vegetable tagine and all its sides is a perfect sharing dish for you and your friends on New Year&#8217;s Eve. It is warm and spicy with lots of bright and beautiful colours. Throw in some flatbread for an additional touch. All the&nbsp;ingredients can be found in&nbsp;Migros.<\/p>\n\n\n\n<figure class=\"wp-block-image alignfull\"><img loading=\"lazy\" decoding=\"async\" width=\"1280\" height=\"824\" src=\"https:\/\/ahungryblonde.com\/wp-content\/uploads\/2019\/12\/IMG_8575.jpeg\" alt=\"\" class=\"wp-image-13524\" srcset=\"https:\/\/ahungryblonde.com\/wp-content\/uploads\/2019\/12\/IMG_8575.jpeg 1280w, https:\/\/ahungryblonde.com\/wp-content\/uploads\/2019\/12\/IMG_8575-600x386.jpeg 600w, https:\/\/ahungryblonde.com\/wp-content\/uploads\/2019\/12\/IMG_8575-300x193.jpeg 300w, https:\/\/ahungryblonde.com\/wp-content\/uploads\/2019\/12\/IMG_8575-1024x659.jpeg 1024w, https:\/\/ahungryblonde.com\/wp-content\/uploads\/2019\/12\/IMG_8575-768x494.jpeg 768w, https:\/\/ahungryblonde.com\/wp-content\/uploads\/2019\/12\/IMG_8575-770x496.jpeg 770w, https:\/\/ahungryblonde.com\/wp-content\/uploads\/2019\/12\/IMG_8575-370x238.jpeg 370w\" sizes=\"auto, (max-width: 1280px) 100vw, 1280px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>1&nbsp;sweet potato, peeled and cut into chunks<\/li><li>1&nbsp;aubergine, cut into rough chunks<\/li><li>2&nbsp;courgettes, halved lengthways, sliced&nbsp;<\/li><li>1 yellow or red&nbsp;pepper, stalk removed, seeds removed, cut into rough chunks<\/li><li>1 tbsp mild olive oil&nbsp;<\/li><li>1 small&nbsp;onion, thinly sliced<\/li><li>2&nbsp;garlic&nbsp;cloves, thinly sliced<\/li><li>1 tsp ground&nbsp;coriander<\/li><li>1 tsp ground&nbsp;cumin<\/li><li>1 tsp of ground cinnamon<\/li><li>200g tin&nbsp;chopped tomatoes<\/li><li>1 tbsp&nbsp;harissa&nbsp;paste<\/li><li>1 tbsp clear&nbsp;honey<\/li><li>100g&nbsp;dried apricots, halved<\/li><li>200g tin&nbsp;chickpeas, rinsed and drained<\/li><li>handful chopped&nbsp;fresh coriander, mint and parsely to garnish<\/li><li>salt and freshly ground&nbsp;black pepper<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">For the yogurt dip:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>150 g of S\u00e9r\u00e9 maigre<\/li><li>1 pomegranate<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Hummus:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>200g of tinnned chickpeas&nbsp;<\/li><li>1 tbsp of olive oil<\/li><li>1 lemon juiced<\/li><li>1-2 tbsp of tahini<br><\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<h2 class=\"wp-block-heading\">Tagine:<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Mix the onion, garlic sweet potato, aubergine, courgette and red pepper in a large bowl.&nbsp;<\/li><li>Place all the vegetables, tinned tomatoes and a tin filled with water, spices, in a slow cooker on a low heat for 4 hours or in a saucepan on a low heat for 4 hours. Remove the liquid from the tinned chickpeas but keep in a bowl.<br>2. Place the chickpeas in a blender, add the juice of the lemon, tahini and sprinkle of salt.<br>3. Blitz it all together and if it is really thick, add a tbsp of chickpea liquid.&nbsp;<br>4.
