All this paired with a little lemon olive oil, really brings the dish alive.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Serves two<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients:<\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>1 packet of rosemary tagliatelle<\/li><li>200g of mixed tomatoes (I used cherry, \u2026.<\/li><li>\u00bd round aubergine<\/li><li>2 fresh garlic cloves<\/li><li>1 shallot<\/li><li>1 tbsp olive oil<\/li><li>1 tbsp lemon olive oil<\/li><li>Salt &amp; pepper<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/i2.wp.com\/ahungryblonde.com\/wp-content\/uploads\/2019\/07\/6127028352628210007_IMG_0969.jpg?resize=1024%2C719&amp;ssl=1\" alt=\"Minestrone Montreux\" class=\"wp-image-12651\"\/><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">Instructions:<\/h4>\n\n\n\n<ol class=\"wp-block-list\"><li>Cut the aubergine into slices and sprinkle with a little salt then put aside. The salt brings out the moisture in the aubergine.<\/li><li>Pre-heat the oven to 180\u00b0C, slice the cherry tomatoes in two and the other tomatoes in smaller slices. Chop the shallot and garlic and mix in with the tomatoes.<\/li><li>Take the aubergine slices and slice them into cubes.
