It makes for a really easy midweek meal for you and your friends or family. If you are feeling ambitious, then why not make your own curry paste, but if you are in a hurry, then do what I did and used store-bought curry paste.<\/h1>\n\n\n\n<h3 class=\"wp-block-heading\">Hope you enjoy my recipe! xx<br><\/h3>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/ahungryblonde.com\/wp-content\/uploads\/2019\/04\/IMG_3565-1-1024x682.jpg\" alt=\"Prawn Coconut Noodles\" class=\"wp-image-12364\"\/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>INGREDIENTS<\/strong><br><\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>2\u00a0 tablespoons olive or coconut oil<\/li><li>400-500g of raw peeled and deveined prawns<\/li><li>1 shallot, finely chopped<\/li><li>3 garlic cloves, minced<\/li><li>1 red or orange pepper, sliced<\/li><li>1 carrot, sliced<\/li><li>2 celery sticks, sliced<\/li><li>1 tsp of freshly minced ginger<\/li><li>1 can of light coconut milk (or regular)<\/li><li>3 tbsp of curry paste<\/li><li>2\/3 portions of rice noodles (follow the packet instructions)<\/li><li>Sliced red onion (optional)<\/li><li>Chopped coriander (optional)<\/li><li>1 wedge of lime (optional)<\/li><li>1\/2 teaspoon salt<\/li><li>1\/2 teaspoon pepper<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>INSTRUCTIONS<\/strong><\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>In a large frying pan over medium heat and add 1\u00a0tablespoons of oil.\u00a0<\/li><li>Add the prawns and cook until pink on both sides, season and set aside.<\/li><li>Take out a saucepan and add another tablespoon of oil on a medium heat.<\/li><li>Fry the shallot and garlic first for approx. 5 mins then add the carrot and peppers until they have started the soften slightly.\u00a0<\/li><li>Add the ginger, fry it off with the rest of the vegetables.<\/li><li>Add the curry paste, mix well then quickly add the coconut milk and stir everything together.<\/li><li>Add a little water if you feel that you need a little extra liquid.<\/li><li>Leave all the ingredients to simmer on a medium heat for 5-8 minutes or until the vegetables are soft but not mushy.<\/li><li>Add the celery and leave for a further 2 minutes.<\/li><li>To serve, place a handful of rice noodles in a bowl and cover with the coconut curry.
