Basil Ricotta Pesto


  • 2 paquets of basil
  • 250g ricotta
  • 1 garlic clove
  • 20g of toasted pine nuts
  • 4 tbsp freshly grated Parmesan (or alternative vegetarian hard cheese)
  • 1/2 lemon – juiced
  • 2 tbsp of olive oil
  • Salt and pepper
  1. In a Nutribullet blitz all the ingredients together, add a little more olive oil or lemon juice to suit your taste and consistency.
  2. Serve with pasta or as a dip.
