- 2 paquets of basil
- 250g ricotta
- 1 garlic clove
- 20g of toasted pine nuts
- 4 tbsp freshly grated Parmesan (or alternative vegetarian hard cheese)
- 1/2 lemon – juiced
- 2 tbsp of olive oil
- Salt and pepper
- In a Nutribullet blitz all the ingredients together, add a little more olive oil or lemon juice to suit your taste and consistency.
- Serve with pasta or as a dip.
